RAW ICE CREAM

So easy to make – soak a handful of raw cashews (or Brazil nuts), drain and add to blender with pulp and water of one young coconut, handful of raisins, pulp of one awesome plump vanilla bean, some agave nectar if you like, maybe a dash of cinnamon, a tablespoon or 2 of raw cacao butter melted. Puree with total joy, pour into container and freeze.

Can cut in half after blending and blend some cacao powder or carob powder for a chocolaty orgasmic flavor. I’ve made this without the cacao butter and its perfectly fine – it just adds more depth of flavor and texture I think. I’ve also added fresh peaches blended into the vanilla – oh yeah, umm shiver!
